Casserole Recipes!

These Casserole Recipes are some of my favorite because they are so easy to make and serve. With just a touch of experimentation you can transform most of these recipes into almost a totally different dish. What I do is make the dish exactly how the recipe instructs. Then I tweak it just a bit. If that does not make it better, I of course start over. But after you have prepared food for as long as I have, you develop a sixth sense in how to make a good recipe better. That is what you will find here. A good recipe made better.

I will continue to list some proven Authentic Cajun Casserole Recipes, like pork casseroles, sweet potato casseroles, sausage and beef casseroles, and of course chicken casseroles. The list goes on and on.

Baked Chicken Casserole


1 frying chicken, cut up & seasoned to taste
1 can cream of celery soup
1 can cream of chicken soup
1 can condensed milk
1 can water
1/2 cup flour

Combine all ingredients. Bake 45 minutes at 425 degrees. This dish creates its own delicious gravy.




Sweet Potato Casserole

1 (2 pound, 14 ounce)can sweet potatoes
2 Eggs1/2 cup sugar
1/3 cup evaporated milk
1 teaspoon vanilla
TOPPING:1/3 cup margarine
1/4 cup light brown sugar
1/2 cup flour
1 cup chopped nuts (optional)


In a saucepan over low heat stir the sweet potatoes until thoroughly heated. Remove from heat and cream well. In a bowl mix together the remaining ingredients and add the mixture to the potatoes. Pour the mixture into a pie pan. In a small saucepan melt the margarine and add the remaining topping ingredients. Pour the topping over the potatoes.Bake the casserole, uncovered, at 350 degrees F. for 35 minutes. Serves 4-6






Squash Cheese Bake

1 pound yellow squash, sliced
2 eggs, beaten
1/4 cup finely chopped onion
1/2 teaspoon sage
1 cup grated Cheddar cheese
1/2 teaspoon salt
Paprika

Steam the squash until tender and drain it. In a large bowl blend together thoroughly the squash, eggs, onion, sage, 1/2 cup of the cheese, and salt. Pour the mixture into a greased casserole. Sprinkle the mixture with the paprika and the remaining cheese. Bake the casserole at 350 degrees F. for 20 to 25 minutes or until brown. Serves 4
