The Best Candy Recipes

I have been a pastry chef for many years and love to make candy. Some of them are secret, but many are not and I am sharing them with you.

Candy Recipes are my specialty. I have been making prize winning candy for many years.

Just a couple of things to remember about making candy. First, every stove is just a little different, whether it is electric or gas. If the recipe calls for a certain heat for a certain amount of minutes, be prepared to adjust the amount of minutes in cooking time to get the candy to turn out correctly.

Secondly, adjusting the amount of heat may be a second option to change in order for your candy to come out perfect. Candy making is an art. For your art to be impressive, it has to be done right. Too many seconds cooking time can be as bad as too little.

All of these recipes have been tested by me or by someone I know. If your first batch does not come exactly how it should have, think about it first. Adjust your cooking time a little on the second batch to see if that helped. Be prepared to test, and retest if necessary. And remember, practice makes perfect!


Pecan Pralines

The picture above is a batch of Pralines that I left drying on the counter in my kitchen. It takes about forty-five minutes to one hour to completely dry enough to be packed away.
