What makes Cajun foods so unique and special?

Cajun foods are different from ordinary southern foods
mainly by the spices, technique, and how it is prepared.
Depending on who you talk to will influence the answer you
get on what makes our food so succulent and delicious.

For as long as I can remember all of our family gatherings
were around the food tables filled with foods. Yes I do mean
food tables, because we always had more than just one table
with food. Cajun cooking brings out the best in people. From
my experience, Cajuns love to eat. As the old saying goes,
”Cajun people live to eat, not eat to live.”

We would have one table with just desserts, one table
with several different dishes of vegetables, and a third
table with different varieties of meats. With all the many
Cajun recipes to choose from, we could never settle on just
one. Everyone had their favorite Cajun delicacy to eat and/or
to prepare. Since most Cajuns love to cook as much as eat,
it is no wonder we always had more than just one table with
food. We would start eating around eleven or twelve and not
stop until it was night.

Cajuns live to eat.
